Some 30 years ago, most U.S. consumers residing outside the Southwest viewed Mexican food--albeit Americanized--as somewhat exotic and exciting. Now, however, Mexican-American fare is widely available in restaurants and grocery stores across the nation, and the taco is as ubiquitous as the hamburger.

Although we American consumers have not lost our taste for Mexican-American fare, we now "are moving beyond Mexican to explore a host of Hispanic foods and flavors," says a recent Packaged Facts report.
