This is a good basic book for beginning vegetarians. It has really great recipes that are designed to appeal to teens concerned about getting proper nutrition. Suzanne Havala, a nationally recog-nized author and consultant in food nutrition, provides 20 pages of sound basic information about vitamins, sodium, food groups, school lunches, protein, weight control, and exercise. Bates, Oser and Hinman are all well versed in vegetarian recipes, having taught classes and published numerous cookbooks in this area. All the recipes list calories, protein, fat and carbohydrates. All directions are clearly written to ensure success for even the most novice cook. When possible, variations are given for key ingredients so that one need not prepare only the basic recipes. Some of the recipes: Smoothies, Muffins, Lasagna, Tofu Salad, Hummus, Peanut Butter Orange Spread, Red Beans and Rice, Falafel, Apple Crisp, and Orange Basil Vinaigrette Salad Dressing. A cautionary note about the preface written by the publisher's daughter (a vegetarian): the description of slaughterhouse conditions is not for the faint of heart.
