While New England has classics like Indian pudding and Boston cream pie, and the South has pecan pie, Louisiana pralines, and more, we don't usually think of the Western states as having a particular "dessert identity." Giedt's dozens of recipes show that the West does indeed have its own specialties and traditions, such as New Mexican Pine Nut Cookies, Sweet Tamales, and Texas Ruby Red Grapefruit Sorbet; others, though, could have come from home cooks or restaurants in any part of the country.
